What Is Rendang? Rendang Tok vs Minang & Shelf Life

Rendang is meat cooked in coconut milk and spices, stirred and simmered until the sauce dries into a dark, aromatic coating, and that dryness is why it keeps. It comes from the Minangkabau of West Sumatra and reached Malaysia with Minang migrants. Rendang Tok is Perak’s traditional version, stirred until it turns black. DapoGo states its rendang, sealed in a retort pouch, keeps for two years at room temperature.

The short version
- Malaysia’s culture department, JKKN, credits Rendang Tok’s recipe to the rulers of Perak; Rendang Minang came with Minang migrants to Malaya, says academic Gaik Cheng Khoo.

What is rendang, and is it a curry?
Rendang is a dry curry. Gaik Cheng Khoo, then a University of Nottingham associate professor, writes in The Conversation that it began as “a dry spicy beef dish originally from Padang, West Sumatra”, cooked with chillies, galangal, ginger, garlic, shallots, lemongrass and coconut milk. Malay Mail calls it curry cooked with Asian spices and coconut milk, and Khoo describes the gravy drying into “a dark red aromatic curry that coats tender meat”.

Should rendang be crispy?
No. Khoo points out that once the gravy has dried, any skin on the chicken would definitely not be crispy. That is why MasterChef UK caused uproar in Malaysia when its judges eliminated a contestant because her chicken rendang’s skin was not crispy enough.
The contestant was Malaysian Zaleha Kadir Olpin, whose chicken rendang was served as part of nasi lemak. Gregg Wallace said “the chicken skin isn’t crispy”, and John Torode had said the meat should be “really soft and falling apart”. Malaysia’s then prime minister, Najib Razak, tweeted: “Who eats ‘crispy’ chicken rendang?”

What is the difference between Rendang Tok and Rendang Minang?
The best-documented difference is lineage. Rendang Minang carries the Minangkabau line that Minang migrants brought to Malaya; Negeri Sembilan, a Minangkabau migration destination since the fifteenth century, received rendang’s influence. Rendang Tok is Perak’s traditional rendang: Malaysia’s culture department, JKKN, says its recipe was created by the rulers of Perak, and it is popular especially in Kuala Kangsar.

Khoo notes each Malaysian state is said to have its own rendang, from Rendang Tok in Perak to Bugis-style Rendang Sri Nabon in Johor, so read the table as a guide, not a rulebook. One detail she calls the Malaysian claim to innovation is kerisik, a thickening coconut paste loosely described as coconut butter. JKKN’s Rendang Tok recipe uses 3 tablespoons of it for 1kg of meat, and it appears in both of DapoGo’s Rendang Minang ingredient lists.
Why does rendang keep so long without a fridge?
Traditional rendang keeps because the long cook dries it and the spices preserve it. Khoo writes that rendang’s spice mixture was used to preserve meat before refrigeration, and historian Fadly Rahman, in the Journal of Ethnic Foods, describes the drying that makes rendang durable as long and requiring patience.
He records rendang as a provision for travellers needing preserved food for weeks or months, including West Sumatran pilgrims to Mecca, the journey our umrah and travel food guide covers. That history is about very dry traditional rendang, not a reason to leave homemade rendang out of the fridge.
A pouch adds sterilisation. According to Universiti Putra Malaysia’s food science faculty, retort processing heats sealed food, typically above 121°C, until harmful microorganisms including Clostridium botulinum are inactivated. That makes the food usually safe to store for one to two years without refrigeration. Researchers at the Indonesian Institute of Sciences in Yogyakarta sterilised beef rendang in retort pouches at 1.3 bar for 40 minutes (IJASEIT).
How long does rendang keep, homemade or in a pouch?
It depends on whether the rendang has been sterilised and sealed. DapoGo states its unopened rendang pouches keep for two years at room temperature and should go into the fridge once opened (more in how long retort food lasts). Homemade rendang has had no such treatment, so the food-safety advice of Malaysia’s National Security Council (MKN) applies: refrigerate leftovers promptly, keep them no more than 3 days, and reheat thoroughly before eating.
- Cool it first. Let homemade rendang cool completely before refrigerating it.
- Seal it. Keep it in an airtight container to avoid odours and contamination.
- Check the fridge. MKN advises a fridge temperature of 1–4°C.
Which DapoGo rendang should you buy?

How do you heat and serve rendang from a pouch?
Heat the unopened pouch in hot water. DapoGo’s rendang product pages say to boil the sealed pouch for about 2 minutes. If you soak it instead, with the heat switched off, our heating guide gives 3–5 minutes, and thick, fatty dishes like rendang need the full 5 minutes because heat takes longer to reach the centre of the pouch.
- Boiling water: sealed pouch, about 2 minutes.
- Hot-water soak: boil water, switch off the heat, rest the unopened pouch in it for 3–5 minutes; rendang takes the full 5.
- Microwave: never microwave the foil-lined pouch itself.
The fats in rendang need heat to loosen and release their real aroma. Serve it, as DapoGo suggests, with hot rice, nasi lemak, ketupat, lemang or nasi impit. More in our heating guide.
Quick questions
Does a rendang pouch need to be refrigerated?
Not while it is sealed. DapoGo states its unopened rendang pouches keep for two years at room temperature. The two years apply only to an unopened pouch; once you open one, put what is left in the fridge.
How long does homemade rendang keep in the fridge?
Malaysia’s MKN advises that food stored in the refrigerator should be kept no more than 3 days and reheated thoroughly before eating. Let the rendang cool completely first, keep it in an airtight container, and keep the fridge at 1–4°C.
Can I buy DapoGo rendang in the UK?
