Retort & Ready-to-Eat Food Glossary
The terms you will meet when buying — or manufacturing — shelf-stable food, each explained in a sentence or two. Related terms link to the full article.
- Ambient shelf life
- How long a product stays safe to eat at normal room temperature, with no refrigeration. DapoGo states up to 24 months for its products.
- Co-packing (contract packing)
- You supply the recipe or ingredients; a factory cooks and packs the product for your brand. See the founder’s guide to halal OEM and co-packing.
- Cold chain
- The unbroken network of refrigerated storage and transport a frozen or chilled product needs from factory to customer. Retort products need none of it.
- FIFO (first in, first out)
- Stock practice: use or sell the oldest packs first, so nothing drifts past its best-before date on the shelf.
- HACCP
- Hazard Analysis and Critical Control Points — the international food-safety management system that identifies critical points in processing. A general industry term.
- Halal hub
- An industrial park dedicated to halal production, such as Melaka Halal Hub in Serkam, where DapoGo’s factory operates.
- Heat pad
- A flameless food warmer — activated, it generates enough heat to warm a meal pouch with no kettle, stove or microwave. Useful for travel and hiking.
- Lead time
- The time from confirmed order to finished product ready to ship. In OEM work it depends on recipe complexity and volume.
- MeSTI
- Makanan Selamat Tanggungjawab Industri — the Malaysian Ministry of Health’s food-safety certification scheme for food-processing premises. A general industry term.
- MOQ (minimum order quantity)
- The smallest volume a factory will produce in one run — it exists because machine set-up and ingredient sourcing carry fixed costs. See halal food OEM costs in Malaysia.
- OEM (original equipment manufacturer)
- In Malaysian food manufacturing: a factory that produces goods sold under someone else’s brand. Often used interchangeably with co-packing.
- Pasteurisation
- A moderate heat treatment that kills most — but not all — microorganisms; pasteurised products usually still need refrigeration. Not the same as sterilisation.
- Retort
- The process of cooking and sterilising food inside its sealed pack at high temperature and pressure. Full explanation: what is retort processing?
- Retort pouch
- A multi-layer pouch engineered to withstand high heat and pressure, letting food be cooked and sterilised inside it. The basis of every DapoGo RTE product.
- Foil-lined pouch
- A retort pouch with an aluminium layer that blocks light and air. Important: never microwave this type of pouch — empty the contents onto a plate first.
- RTC (ready to cook)
- Pastes and prepared ingredients that shorten cooking but still need to be cooked — like rendang paste or blended aromatics. Distinct from RTE.
- RTE (ready to eat)
- Fully cooked food — you only heat and serve.
- Sampling / taste test
- The OEM phase where the factory produces a small batch of your recipe for tasting and refinement before full production.
- Shelf-stable
- Safe to store and sell at room temperature. Retort processing is one of the main ways food becomes shelf-stable without preservatives.
- Sterilisation
- High-heat treatment that eliminates microorganisms entirely — what happens inside a retort, and the reason the product keeps at room temperature.
- Best before date
- The printed quality guide date on the pack. Store pouches cool and dry, and practise FIFO.
- White label
- A factory’s existing product sold under your brand’s label — distinct from OEM/co-packing, where the recipe is yours.
